The Right Water Temperature and Ratio for Light Roast Coffee

Here's a confession we hear constantly at the roastery: "I bought a light roast, brewed it my usual way, and it came out sour and thin. Is it me?"

It's not you, and it's not the coffee. No, the roaster didn't send you a defective batch either. It's physics. Light roasts are a different material than dark roasts (denser, harder, less soluble), and recipes tuned for dark roast under-serve them systematically. The fix is almost embarrassingly small: hotter water, a slightly finer grind, and a deliberate ratio, three adjustments that take one brew to apply. This article is the reference card, with the reasoning attached so the numbers stick.

Why light roasts play by different rules

Roasting physically transforms the bean. The longer and darker the roast, the more the internal structure puffs, cracks, and turns brittle and porous: easy for water to enter, quick to give up its solubles. A light roast stops that process early: the bean stays dense and glassy, its flavor compounds locked in tighter architecture.

Two practical consequences follow. Light roasts extract more slowly, so the same water and time that suit a dark roast leave a light roast under-extracted. You taste the sharp acids that dissolve early without the sweetness that follows, hence "sour and thin." And they tolerate more heat, because the roast never built the bitter, ashy compounds that scalding water drags out of dark roasts. Old advice like "never pour boiling water on coffee" was written for a different bean; with dense light roasts, timid water is the greater danger. (This trade-off is also, incidentally, why we accept the trouble of roasting light in the first place; the flavors worth protecting survive at these temperatures.)

No thermometer needed: water off a full boil, rested 30–45 seconds in the kettle, sits right in the light-roast band at most elevations. If you have a variable kettle, set 95 °C and stop thinking about it. (A caveat for mountain readers, since we are some: at high elevation water boils below 100 °C, and here at our roastery's altitude it boils around 95 °C, so "off the boil" already is the target and no resting is needed. Physics occasionally does you a favor.)

One important nuance for the highest-grown coffees: florals are volatile, and a cup brewed at 96 °C can smell slightly less perfumed than one at 93 °C even while tasting sweeter. If you're brewing something intensely aromatic (a Geisha, say) and feel adventurous, run the same coffee at both ends of the band and pick your side. That's the kind of experiment that teaches more than any chart.

Ratio: strength is a choice, extraction is a skill

Keep these two ideas separate and brewing gets simple. Extraction, or how much of the ground coffee dissolves, is governed by temperature, grind, and time; get it right and the cup is sweet rather than sour or bitter. Strength, or how concentrated the drink is, is governed by ratio, and it's taste preference, not correctness.

For 250 grams of water that's roughly 16.5, 15.5, and 14.7 grams of coffee respectively. Pick one, keep it fixed while you tune everything else, and only revisit it once the cup is sweet. If you take nothing else from this section, take the separation itself: "too strong" and "badly extracted" are different diagnoses with different cures, and most brewing frustration comes from treating them as one problem. Chasing strength and extraction simultaneously is how brewing turns into gambling.

Grind: the third leg

Ratio and temperature set the stage; grind size does the fine-tuning. For pour-over light roasts, start at medium-fine (table salt with a little grit), which is a step finer than classic dark-roast pour-over advice, for the same solubility reasons as the hotter water.

Then let taste steer: a sour, watery, fast-draining cup wants a finer grind; a bitter, harsh, slow-draining cup wants coarser. Move one notch at a time. Fresh, evenly ground beans matter more than any exact setting; a good burr grinder (and beans stored properly) buys more cup quality than any other equipment money.

The five-minute dial-in, assembled

Putting the whole card together for a new light roast:

  1. Start at 1:16, 95 °C, medium-fine grind, and your normal pour routine, or our full step-by-step recipe if you want one.
  2. Taste with the cup slightly cooled. Sour or thin → grind finer. Bitter or drying → grind coarser.
  3. Repeat once or twice, moving only the grind.
  4. Sweet but too intense? Loosen the ratio. Sweet but watery? Tighten it.
  5. Lock the recipe and enjoy the rest of the bag on autopilot.

What temperature should water be for light roast coffee?

94–96 °C (201–205 °F), roughly 30 to 45 seconds off the boil. Dense light-roast beans extract slowly and need the extra heat; cooler water is the leading cause of sour, thin cups.

Why does my light roast coffee taste sour?

Almost always under-extraction: water too cool, grind too coarse, or brew too short for a dense bean. Raise the temperature toward 95 °C and grind finer, one change at a time, and sweetness typically appears within a brew or two.

Can you pour boiling water directly on coffee?

On a light roast it's far less risky than folklore claims. A few seconds off the boil is ideal and genuinely boiling water mostly just costs a little aromatic top note. On dark roasts, cooler water (88–91 °C) remains the better play.

What is the best coffee-to-water ratio for pour-over?

Between 1:15 and 1:17 covers nearly all preferences; 1:16 (about 15.5 g per 250 g of water) is the balanced default. Ratio sets strength, not correctness: fix extraction first, then adjust strength to taste.

Does grind size matter more than water temperature?
